Serves 4 people:
Slice the three day old bread and put it in a salad bowl. Pour water over it and leave it to soak for five minutes. Squeeze the bread to remove all the excess water.
Add the sliced tomatoes, onion, cucumber and basil. Season to taste with the olive oil, vinegar, salt and pepper. This is a fresh summer dish and tastes even better if placed in the fridge for one hour before serving.
